For Olive Oil Lovers


An Olive Oil with HISTORY
The medieval city of Boville Ernica invites you let go and enjoy the little narrow streets with the ancient wall that surrounds the whole town. Olive oil is part of the history of Boville Ernica, as well as Famiglia Liberati, who has been living in it since the late 16th Century, active in all areas of agriculture, from farming to olive oil production. Olive oil has been produced by the Liberati family ever since, winning acclaims and awards for its smooth, clean taste and organic qualities as far back as the 1850’s.


 
Today, the production of olive oil comes from 10 hectares of rocky orchards with olive trees approaching or passing the century of age. The historical methods of cultivating the olives and cold press production of the oil are still used; the organic olives are milled in the winter, with the first stage of the pressing still being carried out on a stone mill. Tradition meets 21st Century standards, as these original processes are refined by integrating and adhering to the Organic Food Regulations*, (European Community on Agriculture)  to create a high quality, organic, extra virgin olive oil that reflects the ancient sun drenched territory it originates from.

The pressed oil is decanted and stored in the cellar located within the 500 year old family house, which still holds the old family mill.

Liberati Olive Oil has extremely low levels of acidity, which allow for the definition of “Extra Virgin” to be applied. The Oil, which is produced in small batches and available via direct distribution only, has a rich smooth flavour which can be used to enhance salads and a variety of meat, fish and vegetable dishes. It also maintains its qualities at higher temperatures and so can be used for roasting and frying too.
